Low Carb Reuben Burger RecipeFor the amount of ground beef my family eats, it’s truly astonishing that I don’t have more burger recipes here on All Day I Dream About Food. Prior to this post, I had all of two recipes for burgers, and one of them wasn’t even mine! Really, quite shockingly remiss of me and I sincerely apologize. I love a good, juicy burger and we make quite a few of them at home. Some are quite spectacular, too. The problem is that we gobble them up so fast, there is no time for photos or even recipes notes. I am often creating them on the fly for a quick meal or before friends come over. Usually they are plain beef burgers, jazzed up with some yummy fancy toppings. Sometimes I set up a whole bar of fun toppings for friends and family to create their own fancy burger. I myself am partial to brie, avocado and spicy mayo. And bacon. We cannot ever forget the bacon.

My buddies at NoshOn.It asked  me to join them in a huge blogger burger fiesta called Burger Week. 40+ amazing food bloggers from all over bloggerdom are posting burger recipes this week and NoshOn.It is hosting a giveaway for a new Broil King grill (see details below)! And as all of the participating bloggers are remarkably talented and creative people, the pressure was on to come up with an creative original burger recipe. I mulled over many possibilities and I was leaning toward a stuffed burger for maximum low carb appeal. Because we low carbers often forego the bun, the burger itself has to be spectacular. And stuffed burgers are often pretty spectacular, as long as you stuff them with the right things. So then, what to stuff them with?
Low Carb Reuben Burgers
I finally hit upon the idea of making a burger with all the best flavours of a Reuben sandwich. Reubens have long been one of my favourites, piled high with corned beef, melty swiss cheese, sauerkraut and Thousand Island dressing. At first, I thought I’d stuff the burgers with the corned beef and sauerkraut and then top it with the melty cheese and the sauce. But as I was putting together the ingredients, I realized how much easier it would be to mix things INTO the beef. So I chopped the corned beef and sauerkraut and mixed it right into the meat patties, along with some caraway seeds to get a little of that rye flavour so crucial to a Reuben.
Low Carb Burgers with Reuben Toppings
I also made my own low carb Thousand Island dressing from scratch to avoid all of the added sugars and extra carbs. I stuck to sugar-free ketchup (homemade is great, but Nature’s Hollow Ketchup works well too). I skipped the sweet pickle relish, which can add a lot of carbs and simulated those same flavours with some chopped dill pickles, a little sweetener and some cloves. Then I added a touch of cumin, which is my husband’s trick for a delicious Thousand Island. I topped the grilled burgers with Swiss cheese, of course, and a little more sauerkraut and corned beef. We ate them wrapped in iceberg lettuce and I was really thrilled with the results. All my favourite Reuben flavours in a meaty low carb burger package. Delicious!

Reuben Burgers
Yield: 4 burgers
Serving Size: 1 burger
A meaty low carb burger with all the best flavours of the famous Reuben sandwich! With homemade sugar-free Thousand Island dressing.
Ingredients
    Thousand Island Dressing:
  • 1/4 cup mayonnaise
  • 2 tbsp sugar-free ketchup (Homemade Sugar-Free Ketchup Recipe)
  • 2 tbsp diced dill pickle
  • 2 tsp Swerve Sweetener
  • 1/2 tsp cumin
  • 1/8 tsp cloves or allspice
  • Burgers:
  • 1 lb ground beef
  • 8 oz sliced corned beef, chopped
  • 1/2 cup sauerkraut, drained
  • 1/2 tsp caraway or fennel seeds
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 slices Swiss cheese
  • Additional sliced corned and sauerkraut as desired
Instructions
    Dressing:
  1. In a small bowl, combine mayo, ketchup, dill pickle, sweetener, cumin and cloves. Mix well and set aside.
  2. Burgers:
  3. Preheat grill to medium high.
  4. In a large bowl, combine ground beef, corned beef, sauerkraut, caraway or fennel seeds, salt and pepper. Mix well to combine.
  5. Shape into four 1/2-inch thick patties and grill to desired doneness, about 3 minutes per side for medium.
  6. At the very end of grilling, top each burger with a slice of Swiss cheese and let melt.
  7. Top burgers with additional sauerkraut, corned beef and Thousand Island dressing.
  8. Serve wrapped in lettuce leaves or eat with a knife and fork.
Notes
Serves 4. Each serving has 3.89 g of carbs and 1.11 g of fiber. Total NET CARBS = 2.78 g.
