Hi everyone! This is Kristin from Dizzy Busy and Hungry, back at Memories by the Mile for my monthly post. School is winding down and we are getting primed for summer! I am looking forward to the slower pace of the summer and lots of barbecues and picnics. Early summer is my absolute favorite time of year, because the weather is warm (but not too hot!), the mosquitos are not out in droves quite yet, and we can be comfortable in the house without any climate control for a while (cheaper utility bills, woohoo!)
Today I am sharing with you my recipe for Slow Cooker Pineapple Chicken. I realized after I started writing this post that I shared a slow cooker recipe with you last month as well, with my Slow Cooker Apple Pie! I definitely have been on a crock pot kick lately, even more than during the fall and winter when it is more common for people to cook with their crock pot. But there are good reasons to use the crock pot in the summer months as well! I like to avoid using the oven when the days are warm, which helps us to delay turning on the air conditioner for as long as possible. Although the grill is also a good option, our grill does not light properly, so I don’t like to plan on grilling unless I know my husband will be home to start it up for me. That leaves the slow cooker as a great way to prepare dinner without heating up the house so much.
This recipe was actually suggested to me by a friend of mine on Facebook. I was struggling to complete my meal plan for the week, and I posted that as my status, because I thought it was pretty amusing that someone with a recipe blog couldn’t come up with a few recipes for the upcoming week! My friend responded with two easy recipe suggestions, both of which I wrote down so we could try them out. It took me quite a while to finally make this one because I couldn’t find one of the ingredients. He very specifically stated that one of the ingredients needed to be a sweet and sour sauce made by Kraft, not any other brand. I could not find it anywhere! Eventually, I ended up using another sweet and sour sauce. I can’t say whether or not the dish ended up tasting similar to what my friend makes, but I can tell you that it was delicious! I have made it a couple of times now and I will be making it again!
Ingredients
2 pounds boneless skinless chicken thighs
10 ounces sweet and sour sauce
1/4 teaspoon crushed red pepper (or more if you like more kick)
1 (20 ounce) can pineapple chunks in juice, drain and reserve 1/4 cup of the juice
Instructions
Place the chicken thighs in the slow cooker.
In a medium bowl, combine the sweet and sour sauce, crushed red pepper, pineapple chunks, and pineapple juice.
Pour pineapple sauce mixture over the chicken.
Cook on low for 6-7 hours.
