Back in January, my guy organized a huge card game tournament. Although actually hosted by the owner of the comic book and game store where he volunteers on Friday nights, that man lacked experience with planning this particular style of event, so all of the details fell to my guy instead.

Throughout the fall, he had worked at similar tournaments hosted by other stores in Northern California, so he already knew what it took for the event to run smoothly. He advertised the date across social media, pre-registered players, and printed out all of the lists and materials. With a month to go, he recruited several friends to help him judge the games on the actual event date.

After hearing his stories about the other tournaments, I knew the volunteers rarely received lunch at a reasonable hour. With too many last-minute players to register, seats to set up, and card decks to check, the events almost always started 30-60 minutes late, regardless of which store was hosting!

So the night before, I practically emptied my flour canister baking scones, two types of muffins, and three flavors of cookies to keep the judges’ stomachs full and satisfied. Although half of the muffins returned home with my guy—his six friends all grabbed breakfast on their drive over—they polished off all four dozen cookies in just five hours!

This past weekend, my guy organized another tournament, and with many of his same friends volunteering, I assumed they’d expect cookies at this one too. One of his friends only agreed under the (somewhat joking) condition that my baked goodies would be there!

A few days before, I started brainstorming different flavors to try. As a food blogger, I can never pass by the opportunity to make something new when I know I won’t have any leftovers sitting on the counter to tempt me!

Although a few ideas floated around my head, I asked my guy if he had any thoughts before writing down recipes. After a few moments, he replied, “Caramel apple!” and was so excited about it that he immediately dashed out to the store—at midnight—to buy the ingredients for me.

So here they are… My guy’s Caramel Apple Cookies! Inspired by our favorite treat from Disneyland, these buttery pillows of goodness taste fun and familiar with their chewy fruit tidbits and sweet melty nuggets of caramel. When you sink your teeth into these soft cookies, you’ll never believe they’re low fat and low calorie—they taste just as indulgent as a regular buttery recipe!

I started with my favorite cookie dough base from my Ultimate Healthy Soft & Chewy Chocolate Chip Cookies. Many of you have tried it already and agree… With their buttery flavor and chewy texture, nobody can tell they’re lightened up!

Brown Sugar. It adds extra moisture and chewiness! Brown sugar also contributes a faint caramel flavor, which really enhances the sweet tidbits in this recipe. Both light and dark will work, although I generally prefer light.
Cornstarch. Typically stirred into soups and stews to absorb moisture and thicken them, it does the same thing in cookies. Cornstarch traps the moisture in the dough, which helps keep the cookies unbelievably soft.
Extra Vanilla Extract. I measure out more than the average recipe because extra vanilla imitates butter’s flavor without all of the fat and calories. That little trick works really well in muffins and cupcakes too!

For the mix-ins, it’s really important to dice them finely. The smaller pieces ensure that you get one in every bite, and believe me, it’s really disappointing to only taste a single little nibble of caramel per cookie.

When dropping the cookie dough onto the baking sheet, try to make sure none of the caramel nuggets on the bottom are exposed. They sometimes tend to stick to the parchment paper, and I don’t want you to miss out on any of that sweet candy!

My last secret to extra soft and chewy cookies: Underbake them! Leave the dough in the oven for a brief 10-12 minutes. They’ll look and feel underdone when you pull them out, but the centers continue to cook through on the warm baking sheet as they cool without the outsides turning crisp and crunchy. Baked this way, the cookies stay soft for an entire week—if they last that long!

With their gooey golden morsels and tender fruit tidbits, these Caramel Apple Cookies taste just like your favorite fair treat—sweet and sticky and oh so addictive—just turned into soft and chewy cookies. Even better, they’re a lot easier and much less messy to make!

When I stopped by the tournament on Saturday afternoon, almost all of the judges agreed that these were their favorites. The entire batch had basically disappeared before lunch, and only a few tiny crumbs remained!

Caramel Apple Cookies
Yield: 12 cookies
Serving Size: 1 cookie
These soft and chewy cookies taste just like a caramel-coated apple! And they’re much easier and a lot less messy to make. Store any leftovers at room temperature in an airtight container for up to a week.
1 c all-purpose flour (measured correctly)
¾ tsp baking powder
¾ tsp cornstarch
1/8 tsp salt
2 tbsp unsalted butter, melted & cooled slightly
1 large egg
1 ½ tsp vanilla extract
½ c light brown sugar
2 tbsp dried apple, diced
3 caramel squares, diced (such as Kraft)
  1. Preheat the oven to 350°F, and line a baking sheet with parchment paper or a Silpat.
  2. In a medium bowl, whisk together the flour, baking powder, cornstarch, and salt. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the brown sugar, smearing out any clumps along the side of the bowl. Add in the flour mixture, stirring just until incorporated. Reserve about 1/3 of the diced apples and caramels, and fold the rest into the cookie dough.
  3. Drop the cookie dough into 12 rounded scoops onto the prepared baking sheet. Press the reserved diced apples and caramels into the tops, and flatten slightly. Bake at 350°F for 10-12 minutes. Cool on the pan for 10 minutes before turning out on to a wire rack.
Notes: It’s important to dice the caramels rather finely because this ensures every bite contains a little. It’s rather disappointing to only have 1 or 2 nuggets of caramel per cookie, so cutting them smaller prevents that! 

The cookies should look and feel underdone when you pull them out of the oven. The centers will continue to cook on the warm baking sheet as they cool, and this ensures the cookies stay soft and chewy for an entire week.

Happy Monday! We’re kicking things off with my favorite new sweet addiction and the one thing I couldn’t get enough of this weekend. Ready?
Yep, we’re talking S’mores today. This is one of those times when I had a brilliant idea and just couldn’t wait to tell you all about it… until google came along and showed me that I am not as clever as I thought I was. Turns out there are other people that discovered S’moreos before it ever entered my mind.

Oh well, better late than never, ha.
It all started with a package of Reese’s Oreos that I picked up last Wednesday. I had been anxiously awaiting for stores to carry them ever since I heard about ‘em a couple of weeks ago. Have you had a chance to try them yet? I wasn’t a huge fan of their latest editions, but had no doubt that this one would be the bomb. I am a huge fan of Peanut Butter Oreos and knew that the addition of chocolate just had to be ah-mazing. Can you tell I’m head over heels?

And because a piece of chocolate is already part of a s’more, I added a tablespoon of peanut butter to keep with the whole Peanut Butter and Chocolate theme we have going on here. This is a must – an extra step that is more than worth it!

I am all over the creamy to crunchy ratio in this little sandwich. It’s so gooey and messy and wonderful and did I mention delicious?? I am pretty sure I don’t need to convince you to make this. Do I?

I got to use my crème brulee torch for these pictures. It was my first time using it and I had so much fun. Cannot wait to whip it out more and possibly make actual crème brulee?! I was too desperate to wait until it was time to gather around our bonfire later that night. Patience is not my forte. Clearly.
Plus, I got to indulge twice in one day. Yum!

  4. Peanut Butter Oreos
  5. creamy peanut butter
Instructions
  1. 1. Break (one sheet) of graham crackers in half and. Slather one tablespoon of peanut butter on one side and top with one oreo. Roast a marshmallow. Place gooey marshmallow on top of the oreo, top with one mini Hershey's chocolate bar and place other graham cracker half on top. Enjoy and repeat as many times as possible!
Notes
  1. S'moreos are best when eaten immediately.

All I can say is TRUST ME. We use vegetables in other desserts (think carrot cake, zucchini bread, and pumpkin pie), so why not beets? No one would ever guess that the incredible moisture and beautiful color of this cake comes from an earthy root vegetable!

ingredients

  • 1/2 cup (120 ml) canola oil
  • 1 1/2 cups (340 g) packed dark brown sugar
  • 2 cups (450 g) puréed cooked (boiled or steamed) red beets (about 3 medium-size beets)
  • 1/2 cup (90 g) nondairy semisweet chocolate chips, melted
  • 1 teaspoon (5 ml) vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons (9 g) baking powder (look for aluminum-free)
  • 1/4 teaspoon salt
  • Confectioners' sugar, for dusting

preparation

Preheat oven to 375°F (190°C, or gas mark 5), and lightly oil a Bundt pan.
In a mixing bowl, cream together oil and brown sugar. Add beets, melted chocolate chips, and vanilla, and mix well.
In a separate bowl, combine flour, baking powder, and salt. Add to wet beet mixture, and stir until just combined.
Pour into prepared Bundt pan, and bake for 45 minutes, or until a toothpick inserted near the center comes out clean.
Cool in pan for 10 minutes before removing to a wire rack. Cool completely. Before serving, dust with confectioners' sugar and top with blueberries, if desired.
compassionate cooks' tipReserve 1/4 cup (55 g) of the puréed beets (or purée a fourth beet) to create a red/pink frosting or ganache, using confectioners' sugar and nondairy butter such as Earth Balance. For a ganache, use the water in which you cooked the beets to thin out the topping. For frosting, fluff up using a hand mixer.
Per serving: 228 calories; 9g fat; 2g protein; 37g carbohydrate; 1g dietary fiber; 0mg cholesterol; 117mg sodium.

S’mores are one of the best desserts during the summer.  Try adding those flavors to this Chocolate S’mores Pudding Cake, and you have one dessert that will not last the day.

By now you know that I love s’mores, but I still do not love the sticky mess that comes from roasting marshmallows.
Even with older children comes the scariness of a pointy stick and fire.  It must be the mom in me that cringes when those two things get together.  The more I talk with friends I realize that I am not alone in this aversion to how s’mores are made.

But there is something about the summer and the need for all things s’mores.  Since I absolutely love the flavor combo of  s’mores, I have been having fun creating s’mores that do not need campfires to be enjoyed.
One of my favorite summer time desserts is the poke cake.  Poke cakes have been around for quite a long time, but every so often I have a comment asking what exactly is a poke cake.  A poke cake is exactly what it sounds like.  You bake a cake and then while it is warm, POKE it with a fork or a wooden spoon.  This creates holes or pockets for a filling to collect.  The three main fillings that you can use are sweetened condensed milk, Jell-O, or pudding.
S’mores are made up of graham crackers, chocolate, and marshmallows.  I made sure my cake had plenty of each ingredient for a complete s’mores taste.
This cake starts with a graham cracker crust that you bake the cake on top of.  I happen to like cake mixes, so that is all I ever use for these cakes.  If you want to make a homemade one, feel free too.
Let the cake cool about 10 minutes.  Then poke it with the end of a wooden spoon.  There is no right way to do this, but be a little more careful with this cake because of the crust.  Then whisk together the pudding mix and milk and pour it over the cake immediately.  Try to pour the pudding before it sets up.  Use the back of a spoon to gently smooth and press the pudding into the holes.  Let it cool for about 30 minutes on the counter, then place it in the refrigerator until chilled.
Now for the marshmallow topping.  You could top the cake with marshmallows and broil them for a minute to get the roasted marshmallow taste, but I wanted a smoother, creamier topping.  Stir together a jar of marshmallow cream and one container of Cool Whip.  Go ahead and taste a spoonful because I know you want to.  I did too!!!  Spread it on top and end with chopped up candy bars because more chocolate is always a good thing.
Summer s’mores with out the danger of getting your eye poked out or sitting on a sticky marshmallow-ed chair.  It’s a summer win!!!

Chocolate S’mores Pudding Cake

Cook Time: 28 minutes
Yield: 24 pieces of cake
Chocolate S’mores Pudding Cake
A graham cracker crust, chocolate pudding, and a marshmallow topping give this cake a complete S'mores taste. Perfect summer time dessert without a campfire mess.
Ingredients
2 cups graham cracker crumbs
8 Tablespoons butter, melted (1 stick)
1 box chocolate cake (15.25 oz.)
1 box instant chocolate pudding (3.9 oz.)
2 cups milk
1 container Cool Whip (8 oz.)
1 jar marshmallow cream (7 oz.)
3 full size Hershey chocolate bars, chopped
Instructions
  1. Combine the graham cracker crumbs and melted butter. Press into the bottom of a greased 9x13 pan.
  2. Prepare the cake mix according to the box directions. Spoon the batter on top of the prepared crust. Bake at 350 degrees for 28 minutes or until a toothpick comes out clean. Let cool 10 minutes. Use the handle of a wooden spoon to gently poke holes all over the top of the cake. Use a napkin to keep the spoon clean while you do this.
  3. Whisk together the pudding mix and milk. Pour over the top of the warm cake, trying to get the pudding in the holes. Use the back of a serving spoon to smooth and press the pudding into the holes more. Try to keep the pudding in the center of the cake instead of the sides. Cool for 30 minutes, then refrigerate until chilled all the way through.
  4. Stir together the Cool Whip and marshmallow cream. Spread over the cooled cake. Top with the chopped up candy bars. Cut into 24 pieces of cake. Store in a sealed container in the refrigerator.

BREAKFAST FOR KIDS: PANCAKE BEAR

My little Aries loves Pancakes and she often ask for them but sometimes pancakes alone are just to boring and not too healthy for her. So this time I made her a special pancake she really loved. This Pancake Bear is perfect for kids of all ages and a cute way to introduce fruits into their breakfast. I’m sharing this Pancake Bear at Nature Box Blog.

Ingredients
  • 1½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • To form the pancake bear you will need:
  • strawberries
  • blue or blackberries
  • raspberries
Instructions
  1. In a medium bowl, combine all dry ingredients (flour, salt, sugar and baking powder). Then add milk, egg and melted butter. Whisk well.
  2. Pre-Heat griddle or non-stick pan. Scoop a small amount of pancake mix to form a circle. About 3 tablespoons. Cook until bubbles start to form. Carefully, flip pancake and cook until light brown.
  3. To assemble the pancake bear:
  4. For the bear’s head: use a round pancake
  5. For the ears and body: slice the strawberries into thirds, and use the middle section for the ears and body.
  6. For the tail: slice a sliver of a rounded edge of strawberry.
  7. For the eyes: use blueberries, sliced in half.
  8. For the legs: use raspberries, sliced in half.
  9. For the arms: cut a small piece of pancake to create an arm shape.
